10 Things You May Not Know About Redbird Sous Chef Kim Dimalanta

1 – Despite her early fascination with the restaurant world, Kim studied to become a pharmacist. She graduated with a degree in biology, but following, went straight to culinary school.
2- Her first job after school was as a pastry chef at Drago Centro in Downtown Los Angeles.
3 – During her time outside of work, Kim loves exploring Los Angeles’ various neighborhoods, new restaurants, and plethora of hiking trails and museums.
4 – Her favorite dish at Redbird is the Braised Goat Gemelli because it is “a lovely bowl of complexity and comfort.”
5 – The one ingredient Kim cannot live without is vinegar.
6 – Her favorite TV shows include Black Mirror, The Wire, Game of Thrones and The Office.
7 – When cooking at home, Kim usually makes fried rice with any variety of ingredients available in her refrigerator at the time.
8 – Her favorite place in Los Angeles is Eagle Rock. Because Kim grew up there, it will always hold a special place in her heart.
9 – She is currently planning her first trip to Europe.
10 – She has a mild obsession with cute animal videos.
