Follow Redbird Bar Director Tobin Shea’s cocktail recipe instructions below to make the Bishop of Oxford cocktail from The Plain Truth About the Best Seeds Cocktail Collection. Based off legendary American bartender Jerry Thomas’ Bishop of Oxford recipe, this cocktail mixes red wine with roasted cloves and oranges.

Bishop of Oxford
1 oz Lustau Reserva Brandy
1 oz Real McCoy 12 Year Rum
1/4 oz Cointreau
1/4 oz Fernet-Branca
3/4 oz Bishop Syrup
1/2 oz Raspberry Syrup
1/2 oz Lemon

Bishop Syrup
1/2 Cup Pinot Noir
1/2 Cup Orange Juice
1 Cup Brown Sugar
10 Cloves

In a saucepan under low heat, steep cloves in wine. Turn heat off and add orange juice and brown sugar. Strain and let sit to make Bishop Syrup.

In a Boston Shaker, combine all cocktail ingredients. Add ice and shake until chilled. Fine strain into a rocks glass with ice. Express an orange twist and discard.
