A Trip to Kentucky to Select Redbird’s Own Single Barrel Bourbons

In May 2018, Redbird | Vibiana Chef | Owner Neal Fraser and Bar Director Tobin Shea hand-picked the specific staves on a visit to Kentucky with Maker’s Mark for each of the restaurant’s five single barrel bourbons. The staves are narrow strips of wood that make up each barrel, contributing to the flavor profile of the bourbon. Once the staves were selected, the unaged spirit rested for nine weeks, eventually resulting in 240 bottles. All five are available neat or on the rocks. The Redbird No. 4 is more specifically used in the Kentucky Colonel cocktail.
