Valentine’s Day Los Angeles | Eton Mess Recipe Exclusive
Eton Mess, the traditional British dessert dating back to 1893, made of strawberries, broken meringue, and whipped heavy cream, inspired Redbird Pastry Chef Kasra Ajdari’s own version for Valentine’s Day. Named in part because of its appearance, as well as its preparation technique, Eton Mess was traditionally served at Eton College’s annual cricket game.
Below, Ajdari shares his take on Eton Mess, a great recipe for Valentine’s Day dinner in Los Angeles.

Yields 4 cups
11 oz Lemon Juice
2 cups Granulated Sugar
6 each Eggs
6 each Egg Yolks
Zest of 2 Lemons
4 oz Butter
Combine everything except the butter in a bowl. Set over a pot of boiling water and stir continuously until thick. Remove from the heat and blend the butter into the curd. Cover with plastic wrap touching the surface of the curd and chill until completely cool.
½ cup Egg Whites (About 4 large Egg Whites)
½ cup Granulated Sugar
1 cup Powered Sugar, sifted
Whip egg whites until frothy, slowly pour in granulated sugar, continue whipping until stiff peaks. Fold powdered sugar into stiff peak meringue. Pipe meringue into rosettes, kisses, or spread into sheets. Bake in an oven at its lowest temperature setting, until dry.
2 pounds Strawberries, stems removed and chopped
1 cup Sugar
2 tbs Lemon Juice
Place strawberries and sugar into a pot, with a splash of water. Bring to a boil over medium heat. Stir in the lemon juice, and continue cooking until nearly all of the liquid has evaporated. Make sure to scrape the sides and bottom of the pot while cooking to prevent scorching.
2 cups Heavy Cream
¼ cup Powdered Sugar, sifted
1 tsp Vanilla Extract
Combine ingredients in the bowl of a stand mixer, and whip to medium peaks.
To Assemble Final Dish
Layer ingredients along with fresh strawberries in desired serving vessel. Serve immediately if you desire crunchy meringues, or let rest to allow the meringues to absorb flavors of other ingredients and soften slightly.
