Follow Redbird Bar Director Tobin Shea’s cocktail recipe instructions below to make the Strawberries and Cream from The Plain Truth About the Best Seeds Cocktail Collection. A delicious clarified milk punch cocktail made with strawberry brandy and chai tea.

Strawberries and Cream
1 Cup Appleton 12-Year
1 Cup Ventura Strawberry Brandy
2 oz Batavia Arrack
2 oz Bepi Tosolini Fragola
1/2 oz Pernod Absinthe
3/4 Cup Chai Tea
3/4 Lemon
1 Cup Milk

In a saucepan, slowly warm the milk to a simmer. While the milk is heating, in a large pitcher, add the first 6 ingredients. Once the milk comes to a simmer, carefully add the milk and lemon juice at the same time. The milk will instantly separate the curds from the whey. Let stand in a refrigerator. The curds should settle to the bottom. Line a colander with cheese cloth and place over a large bowl or stock pot. Pour the punch through the colander, and repeat until the cheese cloth has captured all of the curd. Pour the clarified punch over ice and enjoy.
