In a spice grinder, grind the cinnamon, clove, allspice, black pepper and dried orange peels. Place the spice mix into the brandy, bag and sous vide at 140 degrees for two hours.
Filter and add into a cambro with Anejo Tequila, Akvavit, Batavia Arak and Absinthe.
Over a double boiler, melt the 72% Cacao. Once completely melted, pour in two cups of milk off the heat. Whisk until incorporated.
Peel oranges and limes, place the fresh peels into the piloncillo. Muddle to incorporate and allow all the oils from the peels to macerate into the sugar. Add sugar and juice from oranges and limes to the cambro with the alcohol.
Gently warm the chocolate milk and add it to the cambro. The milk will curdle. Allow to stand for 12 hours, the milk will clarify the punch. Strain multiple times through a cheesecloth until clear.
Steep the Rooibos, dried ginger and honeybush in water. Add to the punch until it’s no longer viscous.
